Veggie & Salmon Slices OmelettePrint This
- 2 organic eggs
- 2 slices of salmon bacon
- 1 spring onion
- Half cup diced mixed (red, green, yellow) peppers
- Pinch black pepper and salt
- Sprinkle of chilli flakes
- 1 tbsp coconut oil
Place a pan on low/medium heat with the coconut oil. (preferably non – stick)
When oil heats up, fry salmon slices for 2- 5 minutes
Meanwhile slice / dice all the vegetables (onion, peppers)
When salmon is done, add and fry the vegetables for 1- 2 minutes and add the pepper and salt
Meanwhile beat eggs well with a fork in a medium bowl and mix with chilli flakes then pour onto pan
When the omelette begins to cook and firm up, but still has a little raw egg on top, turn to other side using a spatula.
When done to your liking, remove the pan from the heat and slide the omelette on to a plate.
Serve and enjoy!
