Roasted sweet potatoes with spicy lambPrint This
- 4 lamb chops
- 1 teaspoon garlic flakes
- 1 teaspoon parsley leaves
- 1 teaspoon chilli flakes
- 1 Veggie stock cube
- 2 sweet potatoes - cubed
- 1 cup of cherry vine tomatoes - washed and halved
- For salad;
- 1/4 red onion, cut
- 1/4 cup canned kidney beans - rinsed and drained
- 1/4 cup frozen sweet corn - rinsed and drained
- 1 handful of salad leaves washed
- 1 tablespoon olive oil
- 1 tablespoon squeezed lemon
Pre-heat the oven to 150 degrees Celsius.
In a bowl, mix the vegetable cube, chopped parsley leaves, chilli flakes, garlic sprinkles and sprinkle some warm.
Slighting slice across each steak and dip into the mixture then put in an oven dish and place in the oven for an hour / until done to your liking.
After 30 minutes of cooking add the sweet potatoes and cook for another 30 – 40 minutes.
10 minutes before the lamb and potatoes are done, add the halved tomatoes and turn off the oven.
For the salad;
Mix all the salad leaves in a bowl and lastly pour the olive oil , lemon juice and pinch of salt.
Serve whilst hot and enjoy!
